Hiatus?
Pardon me while I dust myself off from the black hole I apparently fell into this month.
I have been crazy busy with work and school lately. At the end of May, I took a trip to Athens (Pennsylvania, not Greece). That was quickly followed by not one but two weeks of finals. A few additionally days were somehow misplaced in between those activities and this moment. Don’t ask me where I left them, I don’t know.
While I attempt to collect my thoughts and memories from this past month, I’ll settle with revealing my latest kitchen creation. Enjoy.
Berry Banana Breakfast Bars (Vegan):
Ingredients
- 2 bananas
- 1 cup fresh blueberries
- 6-7 medium strawberries (stems and leaves removed)
- 2 cups wheat flour
- 1/3 cup agave nectar
- 1/2 cup vegetable oil
- 1/4 cup + 2 tbsp vanilla soy milk
- 1 tbsp vanilla
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup chai seeds
- Preheat oven to 350.
- Blend fruit and liquids until smooth.
- Stir in dry ingredients.
- Pour mix into square baking pan lined with parchment paper.
- Bake for 30 minutes or until toothpick comes out clean.
- Let cool and then slice.
- Optional: Top with sliced strawberries prior to baking for extra sweetness.
- Bars should be solid but moist on the inside and roughly 1/2 inch thick. Texture will be similar to a fig bar.
